are loan papers binding if we didn't have them notorized at the dealership..are copies are not notorized?

when we signed the papers there wasnt a notory present and the dealership changed the deal right in the middle of everything by accepting a small down payment and now they want more as a deferred payment we cant afford it and there is NO grace period.
