Online dating: how long should you date someone before becoming exclusive?

I'm divorced and am just getting back into dating. I've never done online dating before (and haven't dated at all since college) and it seems like the "rules" are a little different (like you have to assume that everyone is "dating around" while on these websites).
Some questions for more experienced online daters: how long should you date someone before becoming exclusive/deactivating your online dating accounts...especially if you're divorced?
What is the average amount of time you've dated someone before becoming "official?"
Also, is it wise to assume that everyone is dating multiple people until you have "the talk?" Thanks!
